Bites {Savory Carrot Cakes}


This week I dug deep into my iPhoto archives to bring you one of those what-can-I-make-with-what-I-have-in-the-pantry recipes. The hubs and I were trying to cut down our grocery bill, and he asked if I could find something to do with all these odds and ends we had sitting in the crisper and among our dried goods.

For whatever reason, we add an abundance of carrots, so I hopped over to All Recipes.com and typed said vegetable into the search box. I passed up recipes like "Edible Face" (I can't imagine why!) and finally landed on one titled "Carrot Patties." I will admit I was skeptical, but it had four out of five stars from 51 people, and I happened to have all the ingredients it called for, so I said, "Let's do this."

And I did. And it was delicious. So I'm passing the torch to you. Do me proud. :)

Carrot Patties {via All Recipes}
Makes 4 servings

1 pound carrots, grated
1 clove garlic, minced
4 eggs
1/4 cup all-purpose flour
1/4 cup bread crumbs or matzo meal
1/2 teaspoon salt
1 pinch ground black pepper
2 tablespoons vegetable oil Directions  


In a medium size mixing bowl, combine the grated carrots, garlic, eggs, flour, bread crumbs, salt and black pepper; mix well. 

Heat oil in a frying pan over medium-high heat. Make the mixture into patties, and fry until golden brown on each side. 

We served these as the main dish with green beans and mashed potatoes. But others have put them over rice, on buns, etc. Do whatever your taste buds tell you.
