So I am officially in love with this easy-to-make sandwich. It's perfect for those bits of veggies or cheese that you have leftover, and comes together in about 10 minutes. It comes from a recipe card I found inside a thrifted cocktail recipe book, and I'm very grateful to whoever put it there!
I pretty much followed the recipe without any alterations, just the addition of some salt and pepper sprinkled on top before you pop the in the oven. I'm thinking this would also be good with feta or goat cheese, and maybe some sun-dried tomatoes? Yum.
Makes 2 four-inch, open-face slices
1 four-inch piece of French bread
1 tablespoon olive oil
2 rounded tablespoons crumbled gorgonzola cheese
4 to 5 tablespoons cooked broccoli (I steamed mine for about 3 minutes)
1 heaping tablespoon coarsely chopped walnuts
Preheat oven to 400 degrees.
Cut 4-inch piece of bread in half horizontally so you have two slices. Sprinkle 1/2 tablespoon oil on each slice.
In a bowl, mix broccoli, cheese and walnuts. Divide in half and put on each slice of bread. Sprinkle with salt and pepper.
Put slices on baking sheet and bake until cheese is melted, 5 to 10 minutes depending on your oven.
