Bites {Pumpkin Whoopie Pies}


Yesterday after work I couldn't shake my craving for something baked, and preferably with the flavor of pumpkin. Last fall I was obsessed with these soft cakey pumpkin cookies by Jeannette Ordas of Everybody Likes Sandwiches, featured on Poppytalk (I highly recommend baking a batch), so I tried to think of how I could get the same outcome with a different recipe. Enter: whoopie pies.


I had some leftover chocolate chips from last week's Thrifted Kitchen, so I found a recipe online for pumpkin whoopie pies, added the chocolate at the end, and can safely say that I'm in love! :)


Pumpkin Whoopie Pies

Makes 3 dozen whoopies (18 pies)

2 cups packed brown sugar
1 cup vegetable oil
1 1/2 cups solid pack pumpkin puree
2 eggs
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract
1 1/2 tablespoons ground cinnamon
1/2 tablespoon ground ginger
1/2 tablespoon ground cloves
1 egg white
2 tablespoons milk
1 teaspoon vanilla extract
2 cups confectioners' sugar
3/4 cup shortening
Semisweet chocolate chips to taste (I used about 2/3 of a bag)  

Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets. 

Combine the oil and brown sugar. Mix in the pumpkin and eggs, beating well. Add the flour, salt, baking powder, baking soda, 1 teaspoon vanilla, cinnamon, ginger and cloves. Mix well. 

Drop dough by heaping teaspoons onto the prepared baking sheets. Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes. Let cookies cool then make sandwiches from two cookies filled with Whoopie Pie Filling. 

To Make Whoopie Pie Filling: 

Beat egg white and mix with the milk, 1 teaspoon vanilla and 1 cup of the confectioners' sugar. Mix well then beat in the shortening and the remaining cup of confectioners' sugar. Beat until light and fluffy.

My mother in law makes these (I have never tried...I'm afraid if the kids find out they can have them more often then I may be in trouble;) but she uses a cream cheese filling instead of the regular whoopie pie filling. You have to try it! Yours do sound amazing with the choco chips though. I have never thought to try the combination and it sounds delicious!

  4. Alyssa & Mom: I never would have either if I hadn't come across those cakey pumpkin cookies last year, but the two flavors marry beautifully! And I think cream cheese filling would send it over the top! I'll have to give that a try.
